Directions

Melt the butter and olive oil in a saucepan. When hot, add rice and cook until the hull turns white and slightly golden brown, about 8 minutes. Add the garlic and cook 1 minute, stirring constantly.

Add the chicken stock, Worcestershire sauce, Umeboshi paste, onions, cumin, tomatoes and honey. Cover and turn heat to low. Steam until rice is tender. Add the chopped cilantro and stir to combine. Remove from heat and keep covered until ready to serve.
